Dilly Lemon Roast Chicken


1 whole broiler-fryer chicken
5 tablespoons lemon juice
1 teaspoon lemon juice
1 clove garlic, pressed
1/2 teaspoon dillweed, crushed
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper


On rack in roasting pan, place chicken breast side up. In a small bowl, mix together lemon juice, lemon peel, garlic, dillweed, salt and pepper. Brush lemon mixture over chicken. Roast at 350 degrees F, basting occasionally with lemon mixture, about 1 1/4 hours or until leg moves freely when lifted or twisted.
