Jalapeno Grilled Chicken


4 chicken leg quarters*
2 tablespoons canola oil
1/4 cup chopped onion
1 clove garlic, minced
1 cup catsup
2 tablespoons cider vinegar
1 tablespoons brown sugar
1 tablespoon minced jalepeno pepper
1/2 teaspoon salt
1/2 teaspoon dry mustard


In a saucepan, place oil and heat to medium temperature. Add onion and garlic; cook, stirring occasionally, about 5 minutes or until onion is tender. Add catsup, vinegar, brown sugar, jalapeno pepper, salt and mustard. Cook, stirring occasionally, until mixture is blended. Place chicken, skin side up, on prepared grill about 8 inches from heat. Grill about 50 minutes, turning every 8 to 10 minutes. Brush chicken with sauce; grill, turning and basting with sauce every 5 minutes, about 25 minutes more or until chicken is fork tender.

*Chicken breast quarters or one whole chicken quartered may be substituted.
