Mexican Chicken Drumsticks
8 chicken drumsticks
2 tablespoons cooking oil
1 jar (12 oz.) chunky red salsa
1/2 cup shredded Monterey Jack cheese
1 cup tortilla chips
In large frypan, place oil and heat to medium-high temperature. Add chicken and cook, turning, 10 minutes or until chicken is light brown. Drain off excess fat. Pour salsa over chicken. Cover, reduce heat to medium-low and cook 30 to 35 minutes or until chicken is fork tender. Place chicken on serving platter; spoon sauce over chicken. Sprinkle cheese over chicken. Garnish with tortilla chips.
