New England Apple Glazed Chicken Drumsticks


8 chicken drumsticks
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 tablespoons vegetable oil
1 can (6oz.) apple juice concentrate, thawed, divided
1/2 cup chicken broth
1/2 teaspoon cinnamon
3 cooking apples, peeled, cored, sliced
1/2 cup dried sweetened cranberriers


In large resealable plastic bag, mix together flour, salt and pepper; add chicken, a few pieces at a time, and shake to coat. In large nonstick frypan, place oil and heat to medium-high temperature. Add chicken and cook, turning, about 6 minutes or until brown on all sides. Add 1/2 cup of the apple juice concentrate, chicken broth and cinnamon; bring mixture to a boil. Adjust temperature to low; cover and simmer about 25 minutes or until chicken is fork tender. Arrange chicken on serving platter; keep warm. To sauce in frypan, add remaining apple juice concentrate, scraping any browned bits from pan. Add apples and cranberries; cook about 4 minutes or until fruits are tender-crisp. Spoon fruit and sauce over chicken.
