Pepper Glazed Cajun Chicken


4 boneless, skinless chicken breast halves
1/2 - 1 * teaspoon Cajun seasoning
1 tablespoon vegetable oil
1/4 cup sliced green onion
2 tablespoons white vinegar
6 tablespoon hot pepper jelly
1/4 cup chicken defatted broth


Sprinkle Cajun seasoning over chicken. In large, non-stick frypan, place oil and heat to medium-high temperature. Add chicken and cook, turning, about 10 minutes or until chicken is brown. Remove chicken; set aside. To drippings in same pan, add onion and cook, stirring, 2 minutes. Add vinegar, jelly, and broth and cook, stirring, until jelly melts. Reutrn chicken to pan; spoon glaze over chicken. Cover and cook over medium-low heat, turning chicken several times, about 5 minutes or until chicken is fork tender. Remove chicken to serving platter. Increase heat to medium-high and cook until glaze thickens slightly. Spoon glaze over chicken.
