West Indies Curried Drumsticks


12 chicken drumsticks
3/4 teaspoon salt, divided
1/2 teaspoon paprika
1 tablespoon cornstarch
1 tablespoon sugar
1 cup orange juice
1 1/2 teaspoons curry powder
1 teaspoon grated orange peel
2 cloves garlic, crushed
1/2 teaspoon ginger
1/2 cup chopped cashews


In large baking dish, place chicken; sprinkle 1/2 teaspoon of the salt and paprika over chicken. Bake in 375 F. oven 30 minutes. In a small saucepan, mix together cornstarch and sugar. Stir in orange juice, curry, orange peel, garlic, ginger and remaining 1/4 teaspoon salt. Cook, stirring, over medium heat until mixture boils and thickens. Pour sauce over chicken and bake, basting one with pan juices, about 25 minutes more or until chicken is fork tender. Sprinkle cashews over chicken. Makes 6 servings
